In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic and cook for around 5 minutes until soft and fragrant.

Stir in the chopped tomatoes, tomato purée, herbs, stock, and optional sugar. Bring to a simmer and let it bubble gently for 15–20 minutes.

Use a stick blender (or jug blender, carefully) to blend the soup until smooth and velvety.

With the soup still hot (but not boiling), stir in 1–2 scoops of Isopure Unflavoured Collagen until fully dissolved.

Optional: Add a splash of cream or swirl in Greek yoghurt for added richness. Season to taste and serve warm.
