Roast Tomato & Carrot Soup with Collagen (Easy & Healthy Homemade Recipe)

Instructions: 

  1. Preheat oven to 200°C (180°C fan). Place tomatoes, carrots, onion, and garlic on a baking tray. Drizzle with olive oil, season, and roast for 25–30 minutes until softened and slightly caramelised. 

  1. Squeeze roasted garlic from its skins and transfer all roasted vegetables to a saucepan. Add stock, tomato purée, and dried herbs. Simmer for 10–15 minutes. 

  1. Blend the soup using a stick or jug blender until smooth and creamy. 

  1. Stir in 1–2 scoops of Isopure Unflavoured Collagen Powder while the soup is still warm (not boiling) until fully dissolved. 

  1. Adjust seasoning and stir in balsamic vinegar or coconut milk, if using. Serve hot.
